These cookies are super easy and perfect for the fall. They are what I call “cake cookies”. You use boxed cake mix as the main ingredient. They are soft and delicious! I hope you enjoy!
Pumpkin Spice Cookies
1 box of Spice Cake mix
1 15oz can of pumpkin puree
Preheat oven to 350*.
Mix ingredients in a bowl until blended.
(I added a 1/3C of cranberries to mine.)
Drop by the tablespoon full onto parchment paper lined baking sheet.
Bake for 12-14 minutes, or until edges start to turn golden.
Cinnamon Cream Cheese Drizzle:
1C Powdered sugar
1/2 brick of cream cheese (softened)
1/4 tsp vanilla extract
1 tsp cinnamon
6Tbs heavy cream
milk (add by tsps until you get the consistency you like)
Beat together all ingredients but the milk. Add 1tsp of milk at a time until you get it as thick or thin as you would like. I like it thicker than a glaze, but thinner than a frosting.
